Station one: Hot BBQ/Vegetarian (Please choose 4 from the following)
- Satay chicken skewers – tender pieces of chicken marinated with our own special blend of Malaysian spices
- Assorted gourmet sausages including skinless beef, pork and fennel, lamb and red wine, chicken and pine nut
- Quesadilla – Flour tortilla filled with capsicum, guacamole, refried beans red Spanish onion, rocket and melted cheese
- Minute steak – Cooked to perfection with caramelised onion
- King prawn skewers with roasted garlic butter
- Otak otak – Banana leaf wrapped Singapore fish cakes
- Corn fritters with chunky tomato salsa
- Mixed vegetable skewers with rosemary oil glaze
- Bulgogi – Korean dish of barbecued beef with sesame and soy
- Grilled lamb cutlet with minted yoghurt dipping sauce
- Grilled salmon with shiitake mushroom relish
Station two: Sourdough rolls and choice of salads (Please choose 3)
- Caesar salad with cos, bacon, boiled egg, croutons and shaved parmesan
- Greek salad with fetta, olives, sundried tomatoes, cucumber and onion
- Mixed bean salad (chickpeas, black-eyed peas, red kidney) with apple balsamic
- Pasta salad with mixed mushrooms and rocket pesto
- Haricot vert – Green bean and cashew nut salad with honey mustard dressing
- Mixed mesclun salad with julienne vegetables and mixed seeds
- Thinly sliced carrot salad with toasted almonds, raisins with cumin vinaigrette
- Creamy potato salad with red capsicum, baby peas and pernod mayonnaise
Station three: Cold/Seafood/vegetarian (Please choose 2)
- Seafood vinaigrette – Prawns, mussels, calamari, snapper, barramundi
- Freshly shucked oysters with spring onion relish and/or fresh finger lime (3 per person)
- Smoked salmon rosettes with yuzu lemon dressing
- Ocean cured trout with dill mayonnaise
- Vegetable frittata with salsa verde
- Whole baked ham sliced straight off the bone ($3.00 extra per person, min 60 guests)
